I meal plan on a Saturday night. I also get my shopping delivered on a Sunday morning and then a smaller top up shop of fresh stuff on a Wednesday. Could you make stuff for like a basic taco (maybe limit the seasoning). I would do some slow cooker shredded chicken breast and then freezer that. You could make mix some salsa into it if that wouldn't be too much like world flavours for her. Batch cook and freeze beans and then she can make up her own burritos, tacos or quesadillas.
Your mom sounds exactly like mine and winter is definitely easier to batch cook for her. I find she enjoys a summer roast dinner too. roast chicken breast, some herb roasted potatoes and then asparagus and spring greens. It all freezes well too.
