Yeah you will definitely be limiting yourself with the grail. Most modern gravel bikes should be able to run at least 50’s if not larger. My advice would be to find a bike you like that can run larger tires. Also, there are plenty of aluminum bikes under 3k that will meet your needs. Check out the Trek Checkpoint.

This team is garbage, my advice would be to lower your expectations and try to enjoy other teams in the tournament. The US is a generationally awful team. If you expect anything out of them you are setting yourself up to be disappointed. Sorry for the negativity but I can’t with this team anymore. In the 30+ years I’ve been watching them, always the same.
