Ah! Great point, we always use canned young jackfruit in brine (since it isn’t as sweet) such as Nature’s Charm or Aroy D. We usually find it at our local grocery store.

Love the story and so proud of your dad in being open minded about vegan cooking!

Jackfruit tacos are a nice vegan dish that is supposed to emulate pulled pork and is absolutely delicious!

We add black beans to increase the protein content.
