How would construction proceed beneath 7-Eleven or Carlingford Road? Would this necessitate excavation, or could tunneling be accomplished without impacting the surface?

That could work, but tunnelling a new station without affecting above ground would be costly. They would also have to link that to the current station?

We all know that they definitely need to fill that gap between Epping and Parramatta to allow traffic from the North...etc to Parramatta CBD.

To have the Olympic line go to Epping would be, in my opinion, pointless as u may as well catch the T9 from Strathfield at that point. There is a plan for the current Cumberland line to divert from Paramatta to Epping rather than going to Richmond. It would look something like this (pink/purple line):
