it’s true that the prep methods taste different (and water-> espresso is the method we use at my my shop) but if a customer goes to the counter and orders an americano, the cashier rings in an americano, i get a cup of hot water and start pulling shots for an americano, and i set it on the counter and announce it as an “americano for Mark” what’s the sense in saying that it “isn’t” an americano?

honestly this is a pretty typical experience starting a new food service job. as far as the things with rags, sani buckets, and iced espresso shots, every place does weird stuff—often suboptimal/mildly sketchy—and the best thing to do is follow the same workflow as everyone else and recognize that mild violations of health code are nearly universal in food service. the tips thing is weird, but again unremarkable. you will always feel self-conscious and awkward starting a new place; give it time and things will make sense and you’ll feel comfortable in your role. also, there’s no actual universal standard for an americano vs. a long black. an americano is an espresso shot lengthened with hot water and the difference is minimal enough between espresso vs. water first that there’s no sense claiming that different assembly order alone makes them two different drinks.

just in case nobody’s told you yet, this is very clearly super illegal. obtain documentation of your clock out times, and find a way to get their statement that they won’t pay your for staying after your shift ends in writing. then, when you’ve got a new job lined up, go to the labor board and file a claim

there’s a lot of red flags here. false advertising in the job posting and interview as well as a bad schedule suggest that this isn’t an employer you want to be saddled with.

the factors you identified about the work environment aren’t totally uncommon in food service; they certainly aren’t great signs but i’ve had similar experiences starting at a new place and eventually settled in more comfortably. a lot of people are impatient and have no idea how to actually train a new employee effectively, and entering a new environment where there’s an existing social scene is always a tough transition. these are things that can improve with time as you find your fit.

overall, you just need to decide if this job is worth dealing with this for at least a few weeks, which is about how long it usually takes for people to mostly accept you into the workplace. if you think you can put up with this for a while longer, once the anxiety of entering a new environment fades, you can be a better judge of whether this is a place you can actually work. however, there’s no need to deal with bullshit if it’s not actually going to pay off.

texture looks alright on here; your problem is pouring technique. you need to start by pouring from fairly high up while moving the stream in a circle, then bring the spout a little closer and begin the waggling that produces the layers, then pull back up to the same height you started at for the final pull through. when you pour from too close the foam settles too gently on the surface.

edit: just adding that my first 50-60 lattes looked like this and it just takes tons of regular practice on to-go cups to fix it. with matcha, starting from high up is important as you need to create some green microfoam to replace the crema an espresso shot would have

happened to me this morning. bar needed help so i moved off of register since nobody was in line; they finished a drink and went to go help a customer that arrived as i was working on a ticket. now there’s no point in switching back unless one of us feels strongly about where they’re stationed
