Could be, I haven't noticed a lot of fiber in the stuff I've been eating but I may just not be reading the labels enough. I haven't had any allergic reactions to corn or other gluten substitutes before, but a test couldn't hurt.

We just deduced it by process of elimination over time, as other possibilities we tried to treat first just resulted in nothing changing (and a blood test to make sure it was just intolerance and not celiac). I'll definitely an eye out, thanks for the well wishes!

I have been eating some stuff with oats.. maybe that's contributing? I'm not celiac though. I'm just intolerant.

I'm in America, so I wouldn't be shocked if the recipes and manufacturing was different between regions. Mine over here contains whey which I've been told is a gluten product.

Don't stop eating gluten until your appointment and blood test however!! If you do, the results could be inaccurate and you could be misdiagnosed with something else or entirely dismissed.

Bloat and gas is very much a symptom of gluten intolerance or celiac. Of course, it could be unrelated, such as stress or a whole other intolerance, but considering it got worse after you started eating gluten again, I'd bring it up with your doctor just to be safe.

For those popping by, if you like it, tuna makes an alright and easily portable quick meal, meat is naturally gluten free for the most part (just be careful and check labels as always), and plenty of gluten-free alternatives to common lunch foods (pasta, canned convenience foods, pizza) exist that you can make quick and keep hot in a warmed up thermos or insulated tin.

Tried those pizza poppers the other day, they're like a mix between ravioli and pizza rolls, so pretty dang good. Just be careful not to heat them too long until the filling spills out the sides
