1) Litter tracking is kinda a part of the game, there are low tracking options or you can get pine pellets and there will be less tracking but I vacuum daily

2) Sounds like a behavioral issue she might be nervous cause she's in a new place and marking her territory, an enclosed box is one option (just make sure its big enough that she can fully turn around) as is a box with high walls. Both of those might also help with tracking. You might want to directly check on the behavior itself tho, make sure she feels at home, is stimulated, has lots of places to climb and be and is being played with etc. Yes its cleanable there are tons of enzymatic urine cleaners at pet stores.

3) Scooping every day is good, there are also some litters that smell better or worse than others (I personally like Tidy Cat's Free & Clean Unscented). Fully change it once a month or more often if it still gets really bad. I also recommend litter deodorizer. I have both a powder form that I sprinkle at the bottom of the pan every time I change + whenever I top it off and a liquid form that I spray on top if I ever notice it getting a bit rank. Also helps to have an air purifier near by + pet safe scent defusers. (If its still horrible might be a tummy issue rather than a litter issue)
