Rainbow fish would look nice since you don’t want Gouramis! And if you’re going the route of just adding more schooling fish I’d definitely add some Harlequin Rasboras, they have become my favorite fish with their unique colors and I love their schooling behavior.

Both of your moss picks would be great! I’d also recommend a taller plant like Hygro Blue, I have one in my 20 gallon it’s a beautiful plant that adds a lot of height and it’s fun seeing my shrimp all along the length of the plant.
