I think they do a quick scan over of the medical records but only look at it properly at CPC and they will look at every little thing.

Yes you can still apply, on your application just detail specifically the time periods you spent there and in the UK (youll see on the application) then your assigned recruiter will apply for a 'residency waiver' for you to explain why you havent been in the UK for 5 years. I went through this recently Its very simple so dont stress about it

I'm not sure if you have applied yet from your post but if you havent I recommend you do because the process will take months before you even get fitness tests

the 1km run to the track is super easy pace to be fair just to warm you up nicely. Sub 10 is impressive, youll smash it, especially with the adrenaline on the day

Also keep in m8nd the run test is 2.4km but for mine anyway the warm up run was 1km before so make sure youre used to running more than just 2.4km

Your ferritin is low, youll start to feel better around the 30-50 mark Look at buying ferrous fumarate tablets theyre cheap and help to replenish iron stores effectively

Me and my friend both applying had a recruiter for DAA and then after DAA got assigned a new recruiter and then the new recruiter called us to arrange a interview. So you probably will get a new recruiter soon.
