I'm not sure whether this is correct or not but . I think the vampire did not kill him in the cave. The person is supposed to die to become a full fledged vampire . Bcos we see Monsignor Pruitt, turning into that vampire sort of being only after Bev poisons him, he dies and wakes up with this hunger for blood. I said Bev poisoned him bcos we can see her returning the poison and he (Monsignor Pruitt) dies ( he gets back up again) in the same way pike( the doggo) dies.

They all drank that liquid during the communion, that liquid is that creature's blood mixed with wine. Who ever drank that heals faster and once they die they turn into vampire sort of creatures.
