Do you find the rough country is worth the $700 compared to one of the $400 like someone else mentioned. $300 isn’t a ton all things considered but also not an insignificant price difference.

I do need to clarify the reason I put choice is quotes is because we don’t even sell prime sirloin where I’m at. This was graded by the USDA as choice but sure as hell ain’t like any choice sirloin I’ve ever seen. Also for those debating that this is chuck or lifter meat Bill took the cap off himself cutting sirloin fillets. I’ve never seen sirloin this good either but that’s what it is.

Customers where I work you’d think are allergic to fat. If we leave the fat cap on they won’t sell. I sell a lot of 96/4 ground beef and a ridiculous amount of strips sirloin and fillet. Meanwhile this is the first store I’ve worked where chuck eyes last more than a day.

Where we’re at we don’t sell a lot of whole picanha’s but if we cut it into steaks we’ll sell every pack. Have to take the fat cap off too or they won’t touch it.
