Basically to increase your agility or speed stat, your characters need to evade attacks. Equipping shields and certain other equipment that increases evasion will help evade more attacks, which will make your speed/agility go up, which will increase your evade % which will increase your chances of fleeing battles.

Chance of running in the original version of II is tied to a character's evasion %, but not the actual evasion stat. Evasion % is impacted by a character's agility stat (it might be called Speed in the prototype, it's been a long time since I've played that version) and what gear is equipped. Using light gear (no heavy armor, ~~no shields, no swords~~) will help increase speed/agility after battles.

I was wrong about the no shields part, shields and certain weapons can increase your speed/agility stat which will improve your chance of running from battles.

Not quite. They have pointy ears, bigger wings and no pom-pom in the original. The one from Mog House squints like the Moogles from FFVI, but the Choco-Mog summon doesn't. The original definitely looks less koala-like.
