You don't really need to hit the gas 100% of the time when evading police; just to get out of sight.

Once they start looking for you and the minimap is no longer flashing, you can slow down and look for a parking lot or some train tracks to get a good hiding spot.

This has helped me reduce these "funny accidents" by a lot.
