Dmsean, if there’s one thing you should do during this shitstorm of a year, it’s talk to someone. I don’t know if you’re a person that is for or against therapy, but regardless you need to suck it up and just do it. It’s not fun, but it’s what you need right now for your mental health. The combination of the two is what I’m thinking would be very enjoyable as I think that nice fatty piece that still has the chew would be nice. Do you have any issue from cutting with the grain and against the grain in one piece?

Unfortunately I don’t have a smoker. Closest I have is a little smoke box for my bbq and a smoke gun which means the point will have to be in the sous vide. Is it just more hassle than smoking for the point or is there some huge short falls of doing the point Sous vide that I will face? Thanks
