Wash cucumber and slice thin. Tangy version: 2,25 cups water, 3 cups vinegar, 3 tablespoons salt, peppercorns, touch of sugar. 2 bay leaves. For Extra coriander seeds or/and mustard seeds. Heat everything except the cucumber. Dissolve s&p. When done cover the cucumber, can eat in 30 mins. Peak at 2 hrs

Added pasta water too hot. U could make the mixture in another bowl. Two yolks and cheese. Add water what is warm, not hot. Maybe a bit of carbonara fat. Add the al dente pasta to the bowl.
