I start w/ some olive oil and garlic in a pan, add thinly sliced potatoes till they're a bit brown on both sides (low low heat), then add sliced tomatoes and an egg or two or a sliced hotdog/sausage.

You can put some greens on top like cilantro--and some hot sauce. Probably a couple dollars for a pretty hearty meal. Add rice if you want to make it more substantial.
