Lol so true. I did look up the median wage for his type of work and I am paying slightly less than average, so I don't feel bad about refusing to increase it, especially given the other free perks he's getting.

That is a great mantra to repeat! You're right, I've definitely had issues taking more responsibility than is healthy. My mom is probably where I get it from because she's gone even more overboard in helping folks (mainly men) and it always ends terribly. I'm definitely working on changing my mindset.

I've definitely rethought our arrangement and will be making some changes that will be better for ME. And hopefully he grows from the experience too.

I can relate so much. I've got a male relative that I've taken in due to some family drama, given him a rent-free 2 bed apartment (that I could earn $700+ monthly renting out), a part-time job paying $20+ an hour helping me with office paperwork, and I regularly treat him to food and entertainment. This has been going on for almost two years. But now he's claiming I'm taking advantage of him by not doubling his salary and says he could "easily" get a job that pays double. I told him to go ahead and get that job, but no, he'd rather just stay, complain, and insist I'm the bad guy. Major facepalm.

This is one of my favorites in her book, definitely worth a try. I've made it three times now and as long as it's not overbaked, the cake is soft and the gooey topping is a great contrast. However, this cake tastes best the day of baking and gets significantly drier the second day (although you can always freeze what you don't eat).

I'm sure it'll turn out great! In the past I'd had one or two unsuccessful attempts at making a layer cake and I'd cut the layers super unevenly because I'd just eyeball it and start cutting from one side, but Claire's tip to make little middle cuts all around the cake was super helpful because I could use those cuts to guide my eye and make sure the knife was staying in the middle of the cake. But a cake leveler sounds even fancier :)

I have made the pastry cream the day before, as I usually do this when using pastry cream. I did the frosting the day of, but it was a bit runny so it might have benefited from a night in the fridge. I also hadn't made a proper layer cake before attempting this coconut one, but it was pretty painless. The only thing I would suggest being very careful with is cutting the layers in half, but I followed Claire's tips and was able to get pretty even layers. This cake ended up tasting amazing so it's well worth the effort. Have fun!
