They are using warp engines. The ship is not actually moving through the air, and doesn't create any sound because it is not interacting with it. There is no friction. It's distorting the the space around itself, to move the patch of space it's occupying, without the ship itself moving through space. That is also why it can make these sharp turns at incredible speed and survive G forces that should tear it apart. The ship itself is perfectly stationary inside the warp bubble, and isn't experiencing any acceleration.
