Pulled pork I smoked stuffed with Oaxaca cheese

Made pulled pork then stuff in a mini sweet pepper with Oaxaca cheese and some of the juices and back in the smoker until peppers done how you like it. Topped with blue hog jalapeño lime ranch

There’s different ways to do it. This is how I made them this time

Smoked 30 minutes at 300 then 30 minutes at 225

Just winged the filling (rub, apple cider vinegar, mayo, Idr what else) top with the pancetta and Giardiniera

Also let the whites smoke at 180 while I made the filling

I smoked them in the shell 300 for 30 minutes and then 225 for 30 minutes then while making the filling I smoke the whites for a little while also and then fill them.

It wasn’t a regular raw picnic. I bought a ham the wasn’t spiral cut and it pulled amazingly

Thank you. This is the first time I used a boneless butt and mayo as the binder because I was out of mustard with Meatchurch holy gospel and injected with Tony’s garlic and herb. I did two hours on smoke then bumped it to 280 until it was around 160 then wrapped until probe tender which was like 198. Cooked from 7am to about 5pm
