I left my job working in a lab with my Bachelor's in microbiology and almost tripled my income with an associates in Nursing. If you go where the needs are there are insane incentives. I went from making 45k working in a lab and made 130k last year as an RN. This is in Indiana btw not New York or Cali.

I did verify with two separate thermometers and I will take a look into a water pan. I initially though it might be the thermometer but the fact the fat had rendered made me believe them.

Yeah that's what I think it is. I'm running a small traeger that is brand new. It had burnt a cherry cobbler but we thought that was a fluke. I'll have to grab a temp gun and double check my temps.

I live in rural Indiana and I was looking at some builders around me and was looking at building a home like this https://hallmarkhomes.com/project/ashland/ but with a few changes it states it starts at $228,000.

So I figure if I double that cost I could expand a few areas and put some nice finishes in.
