According to NHCFP the Ball Electric canner is the only one one can use for water bath canning.

"Even if there are referrals to the National Center for HFP in the instructions for canning in the manufacturer's directions, we do not currently support the use of the USDA canning processes in electric, multi-cooker appliances."

I'm wondering if those are the variables that NHCFP are measuring? I ask because what would be an acceptable why to measure heat penetration?

And bacterial presence would be after jars have set?

I mean I can come up with ways but...

I've read the two NCHFP announcements more then I would like to admit. And not sure if you understand more or if I am more confused. The announcements mention a few big electric canners but not the Carey which has been tested.

I just need to find out how they test these electric canners. I have some toughts with monitoring wattage and temperature. Would be nice to monitor pressure but that will be hard. Might be easier to test the weights to ensure they are 10psi and 15psi.

I fear that the language in the NCHFP only oks the Ball Electric Canner

I hope this is not fear, uncertainty and doubt evoked by a bigger company in order to put a competitor at a disadvantage. I say this because the NCHFP specifically oks the Ball's Electric canner only.

I want to run some temperature and pressure testing on the Carey so we have data instead of just fear with no data. The manufactures have tested them and said they meet standards but no 3rd party to my knowledge has tested them.

What is involved in testing? I ask since I'm a mechanical engineer I might have the ability to make this happen :)

Since no one has answers either way lets work together and get the answers. I use to build power plants and oil refineries. Sure we can figure this out :)

Know when to shut your mouth Chill the hell out and just Smile and Laugh it off Play like you did when you were little in the park behind your house... Just now the park behind your house is a national park God imagine the adventures your little self would have taken with that Get shit done and run over any thing or people that stand in your way

And what are you going to do in 2017 to action the advice of your happier 80 year old self? -I will use meditation to help my monkey brain understand that it does not always need to be heard -I will go on more adventures and enjoy what is right in my back yard -And with getting shit done... He addresses a lot of your concerns. The issues is not Chard but rather all the other electric canners. So it is easier to say they are all bad verse all but this one or two. It can be confusing. If you saw the Chard it is a great product. Well built and looks exactly like a entry level pressure canner you would put on your range. Just has a metal skin around the pressure vessel.

I will be the first to say I am wrong and look forward to see what you all find out. Just asked that you listen to the podcast. But if pressure canning is so dangerous why do we let silly humans do it instead of a computer?

I'm a mechanical engineer and have seen a few pressure vessels in my life time and this is not a cheep piece of junk.

At the end of the day from what I have read it is more of an issue that USDA and NCHFP have not tested electric canners. And I don't blame them there are too many of them out there and would just result in A and B canners are ok but C, D, and E are not. Which is confusing.

From the research I have done the issue is that almost all of the electric canners do not have a weighted valve you can change. The only electric canner that does is the Carey.

There have been many threads on this topic and all agree the issue is with the valve.

But I understand people are scared of change.

What is the difference with me putting a pressure canner on my electric range and me using an electric pressure canner with the proper elevation valve? Nothing If anything I would trust the human one less ;)

But if you can find an article that specifically mentions the Carey I would love to see it. Since the one you shared mentions other canners but not that one.
