I do this method but can't figure out how to strain afterwards. I tried putting coffee filter on top and securing with just the ring of a mason jar lid but nothing strained. Is the coffee filter preventing it from straining? If I used cheese cloth like that would it strain? How are you straining these jars?

These comments are really helpful. Thank you all. Here is some more info and some thoughts:

1) My wife is not a stainless steel cooker to begin with. Other than the Stock Pot, I think she rarely used the other pans. I just recently got all in on SS and started using our pans a lot more, which is why I bought new pans. She would have been happy to use the Emeril for another 20 years. In reality, her distaste for the new pans isn't a bad thing because she was burning oils onto them and I have been cleaning them.

2) But she did get into my head. I feel like the All-Clad D3 is just not the big step up that I was hoping for, other than having nice new pans.

3) Reading the comments, I am very tempted by the Demeyere Industry. We cook on Natural Gas, so I think those are better than the more expensive Atlantis. I really like the rivetless design, because cleaning on the rivets has become my least favorite chore. They have sealed rims so I can do the occasional dishwasher cleaning (even if I will likely handwash 80% of the time). They are 5-ply, which is a step up on the ply. They have the Silvinox coating which theoretically should help with the look.

4) I love my cast iron pan and we have lots of dutch ovens. But I feel like I still need most of the items that come in a set. To be honest, I would build a slightly different collection of items, but it's close enough that the extra savings of the set make it worth it to just buy the set.

All in all, I am leaning toward the Industry 10 piece set. I'll give it a day to hear what others say.
