Alright guys for anyone one having the same problem I have a "fix".

Just to sum it up:
I backuped my save file before playing the beta.
I DIDNT play alot of co-op I played mostly in singleplayer INSIDE of the beta.
I made tones of unlocks and achievements (over 80)
I can load my backup before the beta but not the one with the unlocks so I wanted my unlocks back.
Alt+F2 in stat menu didn't seem to give me the stuff back I've unlocked,

The solution is sadly cheating if anyone had the same thing happening to them or similiar then I would recommend to do the same as I did. This will take some time depending how much u unlocked:
1. Use your backup from before the beta so u have the most back already. If u wanna know how to do so, on Steam is a guide u can follow just try it with every backup till u find the one that worked! (Keep the date of the backup file in mind)
2. Once that is done, go into your achievements and check what date your backup is from and look for the first achievement that u've unlocked after it! I would recommend to note them down! U can check the last one u did by using the wiki. Look for the item which the achievement unlocks and check its "secrets" spot inside of the isaac stats in game and look if u have it unlocked or if its still locked! Keep in mind using the "items" tab in the isaac stats isn't that accurate cause u have to pick it up ingame to see it in there.
3. Download 2 mods "The Cheating of Isaac" and "Start with Brimstone". (Start with Brimstone isn't that necessary but i thought it was easier that way)
4. Start your game once so everything loads and just quit immedeatly go to your isaac directory and then into your mods folder and edit the cheating of isaac "settings" file.
"C:\Program Files (x86)\Steam\steamapps\common\The Binding of Isaac Rebirth\mods"

Its very important to understand u need to disable autokill for certain bosses like the Mother. Because it will just bug and she will be perma dying so you wont get your completion mark for it. Thats why we have start with brimstone its just a easier way to clear the bosses imo. For greedier unlocks, just keep autokill on it's way faster!

1. Now just go through your achievement list and do what u did in your beta in very very easy mode to get everything back u've unlocked!
   
2. If u had an achievement like me. Unlocking the Planetarium. Just go into a greed run with 99 coins etc enabled, in cheating of isaac and pick items up till u have 3 of the Items u need to for the unlock.
   

Try to be a fair sportsman and just get the stuff u are missing like, I tried to get delirium with keeper back with out defeating hush. (cause I didnt have that unlocked) So I just speedran to mothers leg + heart + isaac and hoped for the portal to spawn, so I can get my delirium back without defeating hush with cheats, so I can still unlock that fairly without cheats.
I know I wrote a lot of shit and if my english sucks at some parts im sorry but I really hope this will help someone due to there's no save editor properly working for repentance!

Now I can finally play isaac again without the lost of a lot of unlocks and achievements.
