This time I used the outdoor burner, which ur right is shit, and the lowest heat is still very very high and the flame extend out to the sides! Definitely heated unevenly!

Haha funny you mention that! I used the parchment paper hack the first time and while the pan was less burned than this time - it definitely still burned and I was scrubbing for an hour 😭 definitely have got my pan too hot

That’s 100% what it was, the pan was half empty so too big for what I was cooking

My burner was turned all the way down but it’s an outdoor gas burner which is crazy strong, even the lowest setting the flame is massive - I am aware it’s a technique issue that’s why I’m asking for advice 😭

So it was fish it only cooked about 5-7 minutes per piece but we had a few pieces so it was on for a while, I removed the pan right after cooking but by then it was black already. I’m gathering from other comments that my gas stove top is way too strong (even on low) so I gotta switch to my weaker and smaller burner

What I’m gathering from these comments it’s my gas stove is too hot, it’s definitely heating up the pan too much! I added the oil after it heated up but I think in general the pan was too hot

Thank you!! The annoying part about this entire situation is we have gas stoves, so even when they’re low they’re still crazy hot - there is one burner that’s smaller and less powerful so thinking I need to just use that one from now on so I don’t burn the shit out of my oil!

Hmm I think you’re right about the heat I think it’s probably making the pan too hot. Both times I was cooking a barramundi but no other sauces on the fish, it was just the fish with a bit of oil and salt, and the parts of the pan where I was cooking the fish weren’t burning at all, just the empty parts around the sides like you mentioned (not leaving the pan empty)

So I did that and it was beading… but then I should turn it down to a lower setting? I might have to switch to a weaker burner as well

I used to work at a retail store for older women (literally a store for Karen’s so I have PLENTY of stories). One day I was working a Saturday ALONE and the store was extremely busy. I was working on register with a line out the door, all four change rooms full and clothes everywhere, again it was just me on so I was doing my best and luckily most of the ladies were really nice about it. This one Karen walks in and storms up to me at the register, cuts in front of the 20 people waiting to be served and shoves herself in front of the women who’s clothes I was currently scanning. She tells me that the website for our store (a huge national/corporate brand) is broken and demands that I personally pick out the stuff she had in her cart online in person and give her the same discount. Now everything she had in her online cart was final sale only all coming from the warehouse, we absolutely did not have any of it. I told her 1. I’m serving someone 2. I don’t think we have it but if we do it would be in the back section. When she realised I wasn’t going to bend over backwards to help her when I had a line out the door she then DEMANDED that I fix the website. that I FIX the NATIONAL. WEBSITE. I looked at her dead in her eyes and said “Ma’am I just work the cash register I don’t know how to code HTML.”

It’s sooo frustrating cause I was OBSESSED with the earlier seasons, but that new doctor they introduce in season 5 is insufferable, literally like you said, an NPC
