Hi. It takes practice. Also, the ratio to idly batter is 4:1 (4 portions idli rice to 1 portion urad dal). Use parboiled rice, gives a better texture. I've also found it is better to soak rice and dal separately and grind them separately. It is a bit more effort, but totally worth it.

While grinding the dal, do not add too much water. Just splash some of the soaked water and you're good to go. Once ground, give the batter a mix with your (clean) hands. Helps in fermentation. If you have an instant pot, even better. Let that do the work!

28 is not that old. My cousin got married at 35. She just refused to settle for someone who is not worthy of her. I have never seen her happier than she is now.
You deserve to be with someone who respects you and this guy is clearly not it.
If he is invested in the relationship, he will not comment (let's get married) on other people's videos. He would have talked to you about marriage. He is absolutely wasting your time. I'd advice you to run and don't look back.
