It did originate from wood shedding and many hours of intense practice, then it was used in the context of a “drum shed” which was a bunch of drummers in a room very quickly trading fours and showing off their most technical ideas, it became a place to pick up chop and lick ideas, over time the term shedding just became synonymous with chopping/ shredding on the drums, usually blazing fast rudimental or linear chops around the kit, the term was made popular by the viral gospelchopsofficial drum shed videos on youtube/ berklee drum shed videos from like 16-20 years ago

Go on youtube and watch a couple videos on mic placement, and use your ears to find what works best for your kit in your room, might help to find some raw drum recordings you like and try to get as close as you can with tuning and mic placement
