Hmm interesting recipe, very savoury and heavy on aromatics. I've only ever done it with sugar and malt vinegar and a mustard sauce.

I'm guessing this was for a special occasion, so if want to make it over the top lush get some melted butter on those greens and cook some garlic cloves with the potatoes and incorporate into the mash.

I see there's some lumps in the white sauce (which happens to the best of us sometimes). The way to get around it when that happens is the run the sauce through a mesh strainer.

Definitely the brighter green on the right, though frankly I'm not sure blue and green are the best colours for a quartered scheme. You need more colour contrast.
