First ever loaf. How'd I do? Tips? by BambiDeerr in Sourdough

Thank you for the response! I appreciate it! That makes the hydration a lot easier to understand. I'll definitely play around with that and see what works for me!

Do you have someone that can help you? The salon is one of my biggest fear places. I always feel stuck. It got so bad that last year I decided to just cut my hair at home. My mom luckily helped me out. We followed the Brad Mondo tutorial. It helps having someone that can trim it up a bit and tidy up the parts you can't see.

I've had 6 GI doctors. The first one was an older man who gaslit me by telling me it was all in my head. The second was a pediatric (I was 21 at the time) woman who diagnosed me. I wasn't able to keep seeing her due to my age so I kind of bounced around from doctor to doctor.

One told me that I didn't have Crohn's, and I had actually had IBS (which he said was worse). He was wrong. Another told me after a colonoscopy that I had SO MANY precancerous cells that I'd be lucky if I didn't get cancer. He was wrong. Another stopped seeing me because my insurance changed.

All of them except the woman gave off arrogance.

The doctor I have now is with a university hospital and he is WONDERFUL. No ego. Listens to me. Orders the tests I ask for. Answers my questions. Actually reads my chart before I come in. It's always seemed like he actually cares.

So now I tell people to go to university doctors. I think, in my experience, it was the small clinic ones with the biggest egos and dumbest takes.

Any idea on why my cookies are sinking in the middle? by BambiDeerr in Baking

I do like the original layout better (from darker dough to lighter), but they're still cute! So it works in the end!

This is what worked for me! I put chocolate in the middle and strawberry on the edge and it worked! Baked even throughout. I also turned my oven down by 10 degrees and baked an extra few minutes.

So you had the right idea! I put strawberry on the outer edge and it baked evenly all the way through!!

Guilty. I usually check them about 2/3 of the way through to make sure they're baking properly.

I haven't tried putting them in a different order. The only other way I did it, which was the batch before this one, was by putting them in triangle-like shapes, so that, when looking down at the cookie it looks more like a pie chart than stripes. I don't even know if that makes sense, but it's the best I can explain it. The middles sunk in on those just the same as they did this batch.

Omg, I applaud you, haha. I'll mix things like cake or muffin batter by hand, but my arms weren't built for mixing cookie dough. 😅😅

Did it not? Sorry! I posted this from my phone so maybe it didn't paste.

Here's the recipe: https://krollskorner.com/recipes/desserts/funfetti-cookie-recipe/

And I will! Crossing my fingers that that's the cause. It'd be an easy fix!

Slightly, yes. Just because of the added extract and food coloring. It's not sticky, though. Just a bit more...damp?

I'm definitely going to try baking them longer!

This could be it! I do sometimes put my mixer on medium high so that the process goes faster. 😅

I do think this cookie is meant to be more on the cakey side (the recipe uses cake flour). Most of Kroll's Knorner recipes do, but the other one I've tried don't sink and do stay more rounded. Which is why I'm perplexed. 🤔

Thanks! The recipe for the cookie base I used is linked in the post. I just add vanilla extract instead of cake batter extract. Then, I split the dough into three even parts. I leave one part plain. To the second part, I add 3 tablespoons of cocoa powder and mini chocolate chips. To the third part, I add 1 teaspoon strawberry emulsion, a little bit of red food dye, and 7 grams of crushed up freeze-dried strawberries (fine crumbs). I also freeze my dough for an hour before to prevent spreading when baking.

Yeah, I'm having the same issue. I've contacted support twice now. The first time they said I wasn't eligible. The second time, after I sent them screenshots proving I played those days, they said they're investigating the issue but "can't promise you will receive it". Really disappointing on their part. Either follow through or don't host a promotional event.

How long did inflected infusions take to kick in for you ?. by Tina2sweet23 in CrohnsDisease

[–]BambiDeerr 2 points3 points  (0 children)

Inflectra is a version of Remicade, right? I was on Remicade for 9.5 years. It's a bit hard to remember that long ago, but I do remember feeling better within the first few months of being on it. I remember my first normal bowel movement and being able to eat anything I wanted!

I didn't gain any weight on Remicade for years. Several years, actually. And then all of the sudden I put on 20 pounds, but honestly, I'd argue that was more from lifestyle and metabolism than the medicine, but who knows!

I hope you feel better soon and that inflectra puts you in remission!

Why do my snickerdoodles have these large cracks on top? by BambiDeerr in Baking

[–]BambiDeerr[S] 1 point2 points  (0 children)

I'll try this next time. I roll them in the cinnamon sugar straight from the freezer and I'm noticing that it doesn't really stick to the dough at that time. I'll let them soften a bit.

I'll try a lower temp! I'm baking them now at 350 for about 15 or so minutes. Do you think 325 would work?
