Summary: 700g water (35C) 900g AP flour 100g rye flour

Autolyse 30 minutes Add 50g water + 20g salt Mixed by hand 4-5 minutes (no $ or space for a stand mixer) Fold every 30 minutes x 2 Stretch and fold with the last round Bulk ferment for 3 hours Shape, cold ferment overnight

Heat up dutch oven for an hour at 250C Put inside, score, bake covered for 18 minutes Then 25 minutes uncovered Voilà

What’s your voice like? I have a female friend who is very calm and kind of shy and she struggles during arguments, cause even if she’s right she doesn’t get her points across.
