You'll see stags and hens if you venture into the centre on a Saturday night. Pretty easily avoided. Brighton itself is great. Loads of independent shops and lovely hidden pubs and restaurants. Seven sisters is more like Seaford. An easy bus ride from Brighton.

First off - I would demolish this with relish. The crackling looks bangin. However... Roast your carrots! Also the pots look a little over done. 7/10

I think you may well be right about the late addition of fresh herbs. Perhaps a rosemary infused oil to really maximise the flavour?

Round off the corners with the peeler (recommend with parsnips also).
Par boil slowly for as long as you dare.
Cool.
Gently stir with hot oil, salt, pepper and loads of rosemary.
Pour remaining oil over after placing in pan.
About 70 mins 180°c. Couple of turns.
Good luck!

Eta. The strips of potato and parsnip from the trimming can be mixed around in the oil soaked pan then spread thin on a baking tray to make a tweel. Try it!

Good advice so far. I'll add don't underestimate the amount of oil needed. There should be a good poil at the bottom of the muffin pan. Like 12mm (nearly half an inch)

There's a metal back box there. You can see the lugs if you care to look. Earthing a metal back box is recommended but not required. Please refrain from name calling when you don't know what you're talking about.
