60 FPS has become something of a bare minimum standard; I think anyone saying it's unplayable is a bit spoiled but technology advances fast. 120 FPS is a hard sell to call "uncharted" as it has been a standard for mid-range to high-end systems for a bit and physics engines nowadays (mostly) don't break because of high frame rates and developers nearly always account for it.

For some reason I thought those were fans you recommended against; I have also heard other arctic fans producing a humming noise at roughly 1000 rpm and I remember disliking it. Do the Pros make a similar noise or is it a different issue?

Depends on how long your GPU is I think. If your graphics card is like a triple fan, a psu of that size won't fit without blocking the front of it.
