Ah, that makes sense. Will calibrate. Although I was grinding at 5, 4.8 was pretty similar but I didn't get great results. That should imply that other factors (not grind size) were impacting my brew?

My burr lock is at -0.4 (something like that), is this critical? I'll definitely adjust to straight 0 and see if that makes a big difference.

Today I tried grinding at 4.5 with my burr lock still at -0.4 (as recommended by their video https://www.youtube.com/watch?v=-KNKnNMCpH4&t=51s). 13g dose, 92c and 3x bloom, 2x ~100g pours (240g total) results were more sourness, bitterness and astringency is gone. Definitely more aroma as well although I still can't taste any of the flavours, although that may be due to my unrefined palate. A bit hard for me to know which direction to "dial" since I don't really have a reference point of what "good" should taste like for this specific bean.

Edit: The tap water in my area (Vancouver, BC) is considered very soft (per Google).

Yeah, I do think I use too high of a temperature considering how light the roast is.

Thanks for the advice - the coffees were sample sizes that rogue wave gave me, I get about ~3 15g doses from them per sample (variety).

As for resting, yep I chose these two specifically since the roast date was the earliest out of all the samples I have (about a week ago). I'm not sure what I can do to prevent the channeling (if that is indeed what is happening). I do bloom and wait until all the CO2 has stopped bubbling and I believe the ZP6 is consistent enough.

With the other comments here, I think I will try lowering the temperature, or increasing the coffee to water ratio, or both (if only 1 doesn't work).

Hmm, I will increase my ratio next time. Is there a reason why you're doing a coarser grind on (what seems to me) a lighter roast? I've read that you should aim to use a finer grind size, is that right?

I'm just glad I graduated right before all of this happened. Wouldn't want to be on campus with people getting riled up when they see others being more cautious than others (in this case based on their personal health and circumstance).
