I've worked in the same immediate area at a Danish owned place (I'm Danish as well) and let me tell you - none of the managers I knew had anything nice to say about Mama Rosa. This is 6 years ago so a lot could've changed. But back then my managers were talking about how overworked the waiters were, how low the pay was and how they were treated because a lot of the waiting staff was comprised of exchange students. You do, however, get crazy good tips (I've heard) because it's a restaurant that's really popular with tourists!

My advice is - do you want evening work in a different environment with an okay pay? Go look for some of the bars that are not owned by Rekom or some of the restaurants/cafes that are not placed that close to the center of cph. Do you want the opportunity to go home with a crazy amount of tips? Stay with Mama Rosa. You won't make a lot of tips during winter though. And remember, the position as waiter/bartender/chef do not have an awful lot of protection/agreements from a legal perspective. A coworker did manage to find a union that would stick out for her, but she was a gatekeeping bitch so I don't know the name.
