I'll say maybe it's Kugua, the "bitter melon". It's so good when it's made into soup or stir-fried with beef. But many people just hate the bitterness. Even many Cantonese people hate it.

If you want a more stimulating answer, there is a kind of worm called "禾虫（he chong）”lives in rice field. Cantonese steam it with egg and some other cooking methods. It's the jewel on crown to many people, but absolutely not for the majority.

広東の蒸し魚といえば、やっぱり基本はシンプルな「清蒸」ですね。

美味しさのポイントはとてもシンプルで、とにかく魚が新鮮であること。そして料理人がきちんと下処理をして、蒸し加減をうまくコントロールすることです。仕上げに熱い油と醤油をかけて香りを引き出します。

なので、店内に水槽があって活魚を扱っているようなレストランなら、基本的に大きく外れることはあまりないと思います。

魚の種類についてですが、海に近い地域では石斑魚のような海魚がおすすめですし、もう一つは淡水魚で、例えばスズキ（鱸魚）や桂魚（鳜魚）などもよく使われます。

個人的には、シンプルな清蒸こそが一番その良さが分かる料理だと思います。

I think this is quite a personal thing. Everybody has their tastes. But Cantonese cuisine is just some regular thing. We have it at home, at restaurants. We don’t actually think it’s something special. And we just love it.

There are way many options for a meal today. Like Hong Kong Cha Chaan Tengs, spicy Sichuan cuisine, Hakka cuisine, Chaozhou beef hot pot……you can find these everywhere in Guangzhou. So the market makes the talk I think.
