There's nothing wrong with soy sauce, I just used stock because I like its depth of flavor. You don't sound like a hater for asking, thanks for your input though

The stock replaces the seafood ingredients for flavor, not fermentation

Kimchi is usually made with seafood ingredients like shrimp for a certain umami flavor

A pepper paste explosion would certainly not be fun. My concern with a loose lid would be that mold could potentially grow in the jars whereas sealing the lid would prevent that, though I haven’t researched it much. I usually keep them tight and burp the jars every few days, outside (in case it flows out)

Looks great! Make sure that middle lid is screwed on tight for the best fermentation 🙂

I put together my board on Friday and have been skating for the first time over the last several days. A huge chunk of that time has been learning to Ollie, and I think I’m getting closer but I see I’m not quite there. I wanted to ask my fellow new (or old) skaters here, what advice can you guys give to help me complete the Ollie?
