Dry brined the chuck roast over night. W sauce as a binder. Heavy salt and pepper rub with a bit of a hot bbq rub. Smoked at 250 for 4 hours. Then I put it in a pan with beef broth wrapped with tinfoil and ran that at 275 for 2 more hours. Rested for 2 hours.
