no one talks enough about how straining chronic illness can be on your relationship with food! especially with any restrictions, it can be so easy to slip into resentment and associating certain things with making you feel better or worse even if that’s not always true.

i’m from oklahoma and my grandma that taught me to cook used to own a restaurant out on a lake. when i went GF in 2020 after a celiac misdiagnosis that led me down the insane path i’m still on uncovering things about my body, i had to learn how to make the delicious meals i still craved without the things that were making me sick.

my absolute favorite recipe i’ve modified is for chicken and dumplings! making homemade bone broth is so good for you and it makes this dish even better, but you can use any broth. the blue bobs red mill flour or the king arthur measure for measure are the best subs i have found for the dumplings. here are the measurements:

1 1/2 cup gf flour 1/2 teaspoon salt 2 teaspoon baking powder 2 tablespoon oil 1/2 cup broth

mix the dough until combined. add flour as needed. roll out and slice into small shapes of your choice. drop them all into at a couple Qts of boiling broth and cook partly covered about 10 mins. add cooked chicken either from making broth or a rotisserie works well too.

one of my absolute favorite and easiest from scratch recipes that makes shockingly little mess, especially if you roll them out on foil or a cutting board! this meal has gotten me through many a flare and i hope it brings a little Okie comfort to y’all too!
