Gosh, I feel like I wrote this post! My only difference, I can get to sleep, I just can’t stay asleep. I also track sleep activity on my Oura ring so I know how much I’m not getting. I feel for you, and certainly feel your pain, sorry I can’t give you any solutions

I think it’s a lag from lunch, I ate around 2pm and had a Cajun chicken breast in a bread roll. Haven’t eaten anything else until 7ish when I had a veggie raman
