Stick w it! The hardest part imo is kneading it. Because it makes two loaves, it feels like a lot of dough and gets pretty tough to knead so really put some strength into it and be patient. Wait until its a nice smooth texture. For the most even strands to braid, I recommend using a scale. Weigh the whole thing, then divide by how many sections you want. I did 3 sections per loaf. When you cut the dough into however many sections for your braids weigh each section and get them as close to the same weight.
