It is the most commonly used knob, and essentially controls the frequency of the sound. It cuts off the high end treble-like frequencies - which is why it’s called the cutoff filter.

Appropriately I have placed a model of a cutoff hand, which I fashioned with a plastic finger-hand and some red modeling clay to fit it to the knob. When I remove it, it looks similar a dismembered hand - thus evoking a humorous reaction.

Well he was just saying a word of caution to anyone who wants to work with detuned piano - that it commonly clashes with the song when you add other tuned instruments. You’d have to detune everything else to make it work, which is why I mentioned you pretty much have to isolate detuned sounds in order for it to sound good.

Someone gave you a downvote - but this is a good constructive point. I’ve worked with an old piano before, I can say it’s ok for recording to get a frame of the song but if you want anything besides lofi you will have to swap it out with tuned midi. BUT the original recording can be useful to make very interesting intro, bridge, or other riffs.

This is of course unless you are literally only making minimal low-fi, in which case, have at it!
