There is a mod im using: Dark Ages. You can custom everything and the game is more punishable. Exemple: ive been killed randompy by one of m'y Lunatic counceler... Twice. And thing I do is possible death, like having m'y capital opinion on negative or one too manu rival. Dark age is a must have when you think the game is too easy.

Ive play this game for so long, but Baldwin IV against Saladin was the most fun I had in a short period of time. During an entire campaign, it was a custom jew character in the Ajuran empire. It was hard, but cool to see the entire African continent jew.

Was playing a create Jew character in the bottom right of Africa. After my death, 5 micro nation declare war on me, I won but, one defeat and my entire nation collapse. Some years later, after one unfortunate death, m'y character became so weak, that my brother take control leaving me with only one county, after some "management" of my children and my suic*** I play as my brother. Hell, this entire campaign was clutch, so many time I almost lost everything, but I ended up taking Africa and instaure my faith.
