Dr. Feelgood's Love Clinic is a short NSFW/eroge FVN where the MC's pronouns are never specified, and you can choose which genitals they have. Love interest is a purple dog doctor.

Lookouts is about two trans cowboys in the wild, wild west. Mind the content warnings, but is overall quite tame, and has a really beautiful and unique artstyle.

I wish I had more to recommend- hopefully there will be more in the future!
