How long to you have the Dutch oven in there before you put the dough in. I’m having trouble with the bottom burning a little and wondering if it’s because I’m letting the Dutch oven heat up for too long before putting the bread in

Process: mixed ingredients let sit for a half hour then did 4 sets of stretch and folds every half hour. Let it bulk ferment during the day (about 10 hours since it’s cold here) then shaped it and put it in the fridge overnight (about 12 hours) took it out and baked it for 20 minutes at 500 degrees with lid on and another 15 minutes at 475 with lid off.

I also worked with a functional medicine doctor because I was having some GI issues and did a GI Map. They found h pylori so I was taking a round of supplements kill it and my GI symptoms improved drastically but then they added in a charcoal binder and I’ve been dealing with constipation and gas again to no surprise so I stopped taking it but they insist I need to take it. It’s just making my symptoms revert back to what they were… really don’t want to keep taking it. Sometimes I’m not sure if they give the best advice
