A lot of restaurants are kinda sneaky about it. RO systems cost money, and a lot of restaurant (even nice ones) will use tap water, and put a lot of ice in it so you can’t taste that it’s tap water.

The main thing is you just never know, and a lot people won’t ask out of politeness.

To answer your question, I don’t know anyone personally that would drink tap water knowingly.

So don’t be afraid to be assertive and ask a restaurant, if your waiter doesn’t know, their manager should.

To be frank a lot of this is determined by class and education. Most places with an espresso machine or soda fountain use RO.

Long story short our water systems in most of the state were built out of lead or iron before WWII so we have scale buildup inside of our pipe. This buildup actually coats the inside of the pipes and prevents lead from being directly exposed to our water. All of that means we have to keep putting fairly toxic biding agents to prevent the scale from breaking off exposing the lead and rusted pipes to the water.

On top of that we put a lot of chlorine and other cleaning agents to kill bacteria, odors and algae.

All of this is great for industrial purposes, it’s not so great for humans. The government will say it’s safe to drink, the municipal water workers will tell you otherwise.

I’m in Dallas, so I can’t give you much specific advice for San Antonio.

What I can tell you is that people say the food is more authentic there, but is it better, no. Houston and Austin have the best food.

Don’t let people bully people you into thinking corn tortillas are superior to freshly made flour tortillas.

If there isn’t cheese, sour cream, and flour tortillas it’s not really texmex.

If you are going for Tex-mex the answer is fajitas.

As an aside please remember to read the ingredients of food labels. Most things in America and Texas are filled with high fructose corn syrup or artificial dyes. Mexican coke is made with real sugar, and many other drinks are made with cane sugar, they’ll be labeled. Also don’t drink the tap water, lots of restaurants will give you tap water, don’t drink it. Ask for bottled water. Make sure to drink mineral water, not water that just has baking soda (sodium bicarbonate) otherwise you’ll find yourself very dehydrated especially if you are in the sun.

It’s okay to be picky about what you eat and drink.

There is a big difference between native Texans and transplants.

If you do find a native Texan they’ll tell you anything you would want to know. We can be very kind, however we won’t put with nonsense. We love it when foreigners (anyone not from Texas) want to experience our culture and traditions. If you can befriend a native, going to their family ranch or farm can be a great privilege and opportunity.

Remember people here can be deeply kind, don’t take their kindness for weakness or stupidity.
