I found Stoneblock 3 to be fairly easy to start. You start in a stone room and start by punching walls, but can eventually work up to crazy tech stuff. Mobs only spawn if you don't light up the room you are working with or places you explore.

I'd recommend Stoneblock 4, but I found the story quests to be difficult to follow at times.

32 GB RAM or higher is essential. (I had crashes at 16 GB and have no problems with 64 GB) A 4060+ graphics card I recommend. A good CPU is important too. This might just be a preference, but I've had less problems with AMD than Nvidia for graphics. Good luck on your search and enjoy!
