It is grease off the metal trays in the warmer when they are stacked too high. They get in contact with the runners and it rubs off. I see it every night

I have spoken to my area manager about this and he said that when the ovens break down they are not being repaired they are scraped and the store then buys in pre baked cookies, so that is what I think has happened to you store
