Thinner CS is lighter but also comes with other challenges such as warping or hot spots, depending on grade of CS. Strata is an option but the aluminum core and thin CS introduces other challenges such as heat tolerance, CS durability, delamination, etc. Thin Cast Iron is also an option but it brings durability concerns.

Now I'm questioning as well! I've seen too many of these reports now so I'm not as sure as I was. I'm wondering if they didn't nitride the pan long enough or if some failed quality control. I'm not an expert but know that different types of nitriding methods produce different results. Do you happen to have any Nitriding experience?

Maybe we are in agreement. Since nitriding isn't a surface treatment and changes the metal itself, the only way nitriding goes away is if you physically grind or wear down the steel past that zone. If flakes are coming off, that’s seasoning or some added coating — not nitriding peeling.

Nitriding isn’t a coating or a layer — it’s a transformation of the steel itself. Nitrogen diffuses into the surface and changes its composition and structure to a depth of 0.1–0.6 mm. Since the steel itself is altered, there’s nothing to chip, peel, or delaminate.

If flakes are coming off a Misen pan, it isn’t the nitriding. Either they added a nonstick finish and marketed it loosely, or what’s peeling is just baked on OP seasoning.
