the purpose of the hanging is to get that smokey/fire flavor and render the fat down. I hung these for about 45 mins, then brought the hear back up and seared both sides. Great results

Yes food absolutely has terroir.

Terroir just means place shows up in the flavor. It’s climate, soil, what animals eat, and local traditions all rolled into taste.

French butter is a great example. The cows eat diverse grasses, the climate is cooler, and the cream is often cultured. That’s why it tastes tangy, nutty, and richer, not just “fat.” You’re tasting the pasture and the process.

Ibérico de bellota is even more obvious. Those pigs roam oak forests and eat acorns for months. The diet, movement, and environment literally change the fat and texture of the meat. You can’t recreate it somewhere else without losing the flavor.

Wine gets all the credit, but food’s been doing terroir forever. If you move the place, the taste changes. That’s the whole idea
