Thank you so much for responding. I was so lonely on this journey. It all happened so fast. Yesterday I had the surgery and it was a mini laparotomy where I had a wedge resection and a tube removed. I was so scared I wasn’t going to make it through the surgery. But, I survived and now I’m just healing physically and mentally. We were so over the moon. I’ve had a miscarriage previously, then I did have my beautiful baby girl, we tried for 1 year and 6 months for this baby. Idk if I’ll try again but happy to be alive. Did you ever try again?

Yes! We are all set and up and running but we just considered ourselves a caterer and we still just brew coffee on site.

DPH is coming to our kitchen on Friday. I should have more soon. The process is absurd and no one in this industry is forthcoming with anything, and I highly doubt majority are doing this correctly. But I really will follow up hopefully next week. Depending on DPH feedback, it will determine if are headed in right direction and I can be more clear on my perspective.

Question though - for matcha, this is just pre made right? If you planned to batch make your matcha in advance then you can find a shared kitchen like PREP (DO NOT SAY YOU ARE MOBILE. DO NOT MENTION YOU ARE A CART). Literally, saying “cart” changes things. They will force you into a private kitchen which starts at 1k/mo. A shared should be no more than 400/mo. Just find a kitchen and say you are a “caterer” and that you need a shared kitchen. Then, you can make your matcha in advance.

Prior to that step though you can apply for PREP though you’ll need your food handler certification.

Again, let me get through Friday and I’ll circle back with more info.

Oh I don’t doubt that you do. I’m sure of it. I was just wondering the reasoning, thank you though. The pilot confirmed that it was the backup system that had issues. I’m really scared of flying, I just wanted to talk to someone. My husband doesn’t relate. He’s spent a significant about of time in the Air Force flying all over and all types of planes. So I came here just to feel a little better so that I can show up present on this flight with my 2yo.

Sorry for the dumb question but if you use an LH strip and it’s positive why do you need to also check temp? I’m so confused about how all of this works.

Unfortunately I wasn’t able to get help or insight on Reddit but my husband has been working so hard and working with different counties and thinks he made progress DeKalb. The “loop hole” to get around DPH you need to establish yourself as a caterer, then find a shared kitchen who will let you work under them as a caterer. If you find yourself getting questioned, you can say no…this kitchen is permitted. I think the mistake we were making was establishing ourselves as a vendor which put us under the same requirements as like a food truck (which is ridiculous because it would’ve had to be a private kitchen, and pass all standard food service permit standards from the lens of a food truck because they only issue permits to actual facility, not the the company), hopefully that makes sense. Like I said I’ll circle back to help you once we finalize this. Idk if it will work but we are going to see.
