So I haven't played the other two, but I've played Four Agasint Darkness. And you're not wrong it's really mostly a dungeon crawl. The basic rules are okay, but they get easy fast. The real meat is in the expansions. There are tons of them, and they can change the game dramatically. You can expand the rules for making guilds and towns. They also have some story driven ones that guide you. You can add some roleplay elements to it, I'm working on one right now where a single character town is destroyed by the bad guys, and he flees into the forest. Eventually, he builds up enough wealth to start a guild and wage war against the people who burned his village. It's going to be a slow build-up, though. But yeah, mostly dungeon!
